大阪来的火山拉面——Tonkotsu Kazan | 豚骨火山 [新加坡]

突然发现不知道为什么,很多美食怎么都有自然灾害有点关系。比如什么龙卷风冰淇淋,Swensen’s的Earthquake冰淇淋拼盘,还有这个地处Novena Square 2的火山拉面。

之所以叫火山拉面,倒不是因为它会喷火,而是那拉面上桌时的最后烹煮与呈现方式。

端上桌的是一个300度的石锅,里面放好了拉面、叉烧、蔬菜、鸡蛋等材料。然后倒入高汤,盖上大红“烟囱盖”。当看到“火山口”有蒸气冒出时(这时的蒸气是真的烫得像在火山口),用桌上的漏斗计时一分钟,就可以开盖来吃了。

这是Tonkotsu Kazan的自创做法。据说这样的呈现方式主要是为了注入一些娱乐元素,同时也让拉面保持热度与弹性。

庞大的一锅除了有香酥的叉烧还有底下大把大把的蔬菜。这个火山拉面的面条是北海道风格的粗粗卷面,口感浓郁的猪骨汤让拉面非常入味。因为面比较粗,所以经得起300度高温的火山考验。

不过吃到后来,因为石锅持续高温,汤被收得越来越浓,味道就变得太咸了。其实他们有提供一份米饭,正确得吃法是把饭倒进汤里吃第二轮。胃口大的朋友可以一个人点一份,不然两个人都应该够吃。18元的价格,4种可选的口味,分量与质量同比新加坡的其它日本拉面算是比较实惠。

相比起霸气的火山拉面,为食主义倒是偏爱这个温文尔雅的九州式拉面。因为不需要经受300度高温的洗礼,所以用的是细长的九州式直面。用10小时熬制的香浓猪骨汤,配上叉烧和温泉蛋,12元的价格,有其它地方18元拉面的味道 (新加坡的日本拉面仿佛总可以被分为12元左右、18元左右、20以上这3个档次)。这类拉面有3种口味:酱油、盐、和辛味噌;我当时叫的是酱油味。

另一个检验拉面店的标准自然是它的温泉蛋了。温度拿捏得还不错,值得点它来丰富碗中的美味。

除此之外,为食主义还试了它家的名古屋式鸡翅。这个用甜米酒(味醂,Mirin)加工过的鸡翅,带着浓郁的照烧(teriyaki)味(据说味醂加酱油就可以调出照烧汁),完完全全的日本料理。不知道有些朋友会不会觉得太甜,但对于为食主义来说,吃过清一色味道的鸡翅,这个名古屋风味很是特别呢。

这家来自日本大阪的拉面店,其实在日本没有分店。它的第一家店就开在新加坡,之后还会向周边扩展。不过它的母公司Sunpark倒是来自大阪,有47年的历史,下属的各种其它餐厅遍布大阪与神户。不仅餐厅经理Yoshida是日本人,连职工都需要去日本受训。

地处Novena这个办公区,Tonkotsu Kazan享有一个非常得天独厚的地理位置。对于那些在附近办公想在中午改善一下伙食的朋友们来说,这是一个不错的选择。不过餐厅的占地并不大,去晚了可能还得等哦。

i refering the novena branch anyway, i wish i can have the novena branch boss or in charge email, so he/she would know what really happen down there.

Very very bad service. no patience to serve, very rude and not friendly. very fake especially, theres a lady came in the shop, i dont know whether its their boss or who, their staff aattitude suddenly change so good, and polite, and when tt lady walk off, their staffs change back again to sucks attitude. i will nv go back eat again, the price is aint cheap, i dont mind, but i cant stand the sucks attitude which i don deserve when im jus wan to have a good meal.

The novena branch:
Terrible service.The waitress has totally no patience to take order,rude,harsh tone,no eye contact,unhappy face,long hair flip here and there with golden yellow color,full of ear rings on one side of the ear….these are some objective observation. The waitress joke and laugh loudly among themselves with no manner of serving people.take order wrongly will just say”wait lah ok?”Few encounters have prove that it’s a lousy place for having nice food due to all these not well trained staffs.It’s a pity to the reputation!

沒看過用這種方式呈現的拉麵
看起來真的很新奇
拉麵本來就很咸了,再一直沸騰收乾之下
可以預想最後的湯有多咸了
